Description

Crispy, flavorful Asian-inspired noodle rolls made with rice paper, vermicelli noodles, and a mix of vegetables and protein. Perfect for a healthy snack or appetizer, air frying ensures a golden, crunchy shell without deep frying.


Ingredients

12 rice paper wrappers
8 oz rice vermicelli noodles
1 cup shredded cabbage
1 cup shredded carrots
1/2 cup cooked tofu or shrimp
2 tbsp soy sauce (gluten-free if needed)
1 tsp minced ginger
1 clove garlic, minced
1 tsp sesame oil
2 tbsp vegetable oil, for brushing
1/4 cup chopped fresh cilantro (optional)
1/4 cup chopped green onions (optional)


Instructions

Soak rice paper wrappers in warm water for 10 seconds until pliable
Drain and place on a parchment-lined baking sheet
Add a layer of vermicelli, followed by cabbage, carrots, and protein in the center of each wrapper
Sprinkle with soy sauce, ginger, garlic, and sesame oil
Fold sides inward, then roll tightly to create a cylinder
Preheat air fryer to 375°F (190°C)
Lightly brush rolls with vegetable oil
Air fry for 10-12 minutes until golden and crisp
Let cool and serve


Notes

To prevent tearing, use a warm towel to keep fillings ready
Brushing with egg whites instead of oil may enhance crispiness
