Ingredients
2 1/2–3 lbs boneless chicken thighs
1/2 cup plain yogurt
2 tablespoons olive oil
1 teaspoon kosher salt
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon paprika
1/2 teaspoon turmeric
1/2 teaspoon cinnamon
1/4 teaspoon black pepper
2 cloves garlic (minced)
2 tablespoons fresh lemon juice
Instructions
Pat chicken dry and cut into 1-inch pieces
In a bowl, mix yogurt, olive oil, salt, cumin, coriander, paprika, turmeric, cinnamon, pepper, garlic, and lemon juice
Add chicken to marinade and toss to coat
Transfer to slow cooker and cook on low 6-8 hours until tender
Let rest 10 minutes, then chop into larger pieces or shred with two forks
Serve warmed
Notes
Use boneless thighs for juiciness
Adjust spices to taste (add harissa if desired)
Let chicken rest before slicing for better texture
Store in fridge for 3-4 days or freeze for 3 months
