Ingredients
- 1 large eggplant
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
- Fresh parsley, for garnish (optional)
Instructions
1. Wash and dry the eggplant, then cut it into 1/2-inch thick slices
2. Place slices in a colander, sprinkle with salt, and let sit for 15 minutes to remove bitterness
3. Rinse eggplant slices under cold water and pat dry with paper towels
4. In a bowl, mix olive oil, garlic powder, onion powder, paprika, salt, black pepper, and cayenne
5. Add eggplant slices and toss until evenly coated
6. Preheat air fryer to 375°F (190°C) for 5 minutes
7. Arrange eggplant slices in a single layer in the air fryer basket without overlapping
8. Air fry for 15 minutes, shaking halfway through
9. Check for crispiness and cook an additional 5 minutes if needed
10. Remove, garnish with parsley if desired, and serve

Salting the eggplant helps remove bitterness and excess moisture for better texture
Do not overcrowd the air fryer basket to ensure even crisping
