Ingredients
1 large eggplant
1/2 tsp kosher salt
1 tsp avocado oil
1/8 tsp crushed thyme
1/4 tsp crushed dried rosemary
1/2 tsp garlic powder
1/2 tsp smoked paprika
Extra coarse kosher salt for sprinkling
Instructions
Cube eggplant into 1-inch pieces. Sprinkle 1/2 tsp salt evenly over cubes and let rest for 10 minutes at room temperature.
