Description
Transform ears of corn into a vibrant vegan street-style dish using an air fryer. Perfectly charred and topped with zesty vegan aioli, lime, chili seasoning, vegan feta, and fresh herbs, this easy recipe is great for any occasion.
Ingredients
5 ears of corn, husked
2–3 sprays of olive oil
3 tablespoons vegan mayonnaise
1 lime, halved (1 half for juice, 1 for garnish)
1/4 teaspoon chili powder or to taste
1/4 cup vegan feta or crushed vegan cheese
1 tablespoon chopped fresh cilantro
1 teaspoon smoked paprika
Pinch of salt, or to taste
Instructions
Preheat your air fryer to 400°F (200°C) and lightly spray the inner basket with non-stick cooking spray.
Place the husked corn in the air fryer in a single layer.
Spray each ear of corn with olive oil and rub it to coat evenly.
Season with a pinch of salt and smoked paprika.
Air fry for 10-12 minutes, turning halfway, until the corn is tender and slightly charred.
In a small bowl, mash the vegan mayonnaise with a fork and mix in lime juice, chili powder, and a pinch of salt to make the vegan aioli.
Once the corn is done, take it out of the air fryer and let it cool slightly.
Brush the vegan aioli evenly over the warm corn.
Sprinkle with vegan feta and chopped cilantro.
Serve immediately with lime wedges on the side for squeezing over the corn.
Notes
For extra flavor, you can add a dash of hot sauce or a squeeze of cumin into the aioli.
Make sure to adjust the seasoning (especially chili powder) according to your preference.
If your air fryer is small, cook the corn in two batches for even charring.
The corn can be prepared ahead of time and stored in the fridge, then finished with the aioli and toppings when serving.
