Description

Crispy-charred, buttery, and smoky corn perfected in an air fryer. Achieve grilled flavor without the mess, with golden kernels and a zesty lime-chili kick from Elote seasoning. A no-grill, kid- and adult-friendly summer staple.


Ingredients

4 ears fresh corn, husked
2 tablespoons olive oil
4 tablespoons unsalted butter, melted
1 tablespoon Trader Joe’s Elote seasoning (or substitute: 1 teaspoon ground cumin, ½ teaspoon chili powder, ½ teaspoon lime zest, ¼ teaspoon chili flakes)


Instructions

Preheat air fryer to 400°F (200°C)
Brush corn ears heavily with olive oil
Place in air fryer basket and cook 10 minutes
Using tongs, rotate corn and brush immediately with melted butter
Sprinkle ½ Elote seasoning (or substitute mix) over all sides
Return to air fryer and cook 4 additional minutes until kernels blister


Notes

For non-Elote seasoning: combine cumin, chili powder, lime zest, and chili flakes
Use parchment paper to easily remove corn from basket
Store cooled corn in fridge up to 2 days; reheat in air fryer at 350°F (180°C) for 2-3 minutes
