Ingredients
2 medium zucchinis, sliced 1/4 inch thick
1/4 cup all-purpose flour
1/4 cup grated Parmesan cheese
1 1/2 teaspoons Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
Instructions
Pat zucchini slices dry with paper towels and season lightly with salt.
Toss flour, Parmesan, Italian seasoning, salt, and pepper in a bowl. Coat each zucchini slice evenly.
Place in a single layer in the air fryer basket.
Spray or brush olive oil over the slices.
Air fry at 400°F (200°C) for 10-12 minutes, flipping halfway, until golden and crispy.
Notes
Use a paper towel-lined baking sheet after air frying to maintain crispiness.
For extra crunch, toss slices in additional Parmesan before air frying.
