Description
Crispy, golden veggie fritters made with zucchini, carrots, and herbs, baked in an air fryer for a healthier twist. Adaptable to dietary needs, these bite-sized bites offer bold flavor and nutrient-rich vegetables in a crunchy coating.
Ingredients
2 cups mixed vegetables (2 cups grated zucchini or carrots; or combo of sweet potatoes, peas, corn, spinach)
1/2 cup all-purpose flour
1/2 cup breadcrumbs (preferably panko or gluten-free)
1 large egg (or 1 flax egg for vegan: 1 tbsp ground flax + 3 tbsp water)
1 tsp salt
1 tsp black pepper
1 tsp garlic powder
1 tbsp olive oil
Instructions
Grate or finely chop vegetables and pat dry with paper towels.
In a large bowl, mix flour, breadcrumbs, salt, pepper, and garlic powder.
Add egg (and flax egg if vegan) to the dry mix, then stir in vegetables until combined.
Form into 1-inch thick patties (about 8 total).
Place 1-2 tbsp olive oil onto air fryer basket. Add patties in a single layer.
Air fry at 375°F (190°C) for 8-10 minutes, flipping halfway, until golden and crisp.
Notes
For gluten-free: use gluten-free flour and certified gluten-free breadcrumbs.
To avoid greasy results, ensure vegetables are well-dried.
Store leftovers in an airtight container for 3 days (best when reheated in air fryer).
Substitute vegetables based on season or preference (try bell peppers or chopped kale).
