Ingredients
2 medium zucchini, halved and cored
1/2 lb halal-certified ground turkey (or beef/chicken)
1/2 cup halal breadcrumbs
1/4 cup grated mozzarella cheese
1 clove garlic, minced
1 tbsp olive oil
1 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper
Instructions
Preheat air fryer to 375°F (190°C)
Drizzle zucchini halves with 1 tsp olive oil and season with salt/pepper
In a bowl, mix ground turkey, breadcrumbs, garlic, oregano, salt, and pepper
Spoon mixture into zucchini boats; top with mozzarella
Air fry for 15 minutes, then increase heat to 400°F (200°C) for 3-5 minutes until golden
Notes
For vegan option: Substitute meat with cooked lentils and use nutritional yeast instead of cheese
Add sautéed spinach or diced tomatoes to the filling if desired
