2 pounds russet potatoes, peeled and cut into 1-inch cubes
1 pound carrots, peeled and cut into 1-inch pieces
2 tablespoons olive oil
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1/4 teaspoon dried thyme (fresh thyme optional)
1/4 teaspoon onion powder


Instructions

Preheat air fryer to 400°F (200°C) for 3-5 minutes
Toss potatoes and carrots in a large bowl with olive oil and 1/2 the seasoning mixture
Transfer to air fryer basket, spreading in a single layer
Cook 18-20 minutes, shaking basket and flipping once halfway through
