Description
Crispy air fryer Parmesan zucchini chips that deliver all the crunch of fried appetizers with less oil and guilt.
Ingredients
- 3 medium zucchini
- 1/2 cup flour
- 1 tsp salt
- 1 tsp pepper
- 1 tbsp Italian seasoning
- 2 large eggs
- 1 cup bread crumbs (panko or Italian)
- 1/3 cup Parmesan cheese
- 1 tsp spray oil
Instructions
1. Combine flour, salt, pepper, and Italian seasoning in a shallow plate.
2. Whisk the eggs in a separate bowl.
3. Mix bread crumbs with Parmesan cheese in another bowl.
4. Slice zucchini into 1/4-inch rounds.
5. Dip each slice into flour mixture, then egg, then breadcrumb mixture.
6. Spray air fryer basket with oil and arrange zucchini in a single layer.
7. Lightly spray the tops with cooking spray.
8. Air fry at 400°F for 5 minutes, flip, then cook another 5 minutes until golden brown.
Notes
Do not overcrowd the air fryer basket to ensure crispiness.
Adjust seasoning to taste.
Serve immediately for best texture.
Try adding a pinch of garlic powder for extra flavor.
