Ingredients
1 pound okra, washed, dried, and cut in half lengthwise
2 tablespoons avocado oil
3/4 teaspoon Kosher salt
1/2 teaspoon garlic powder
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon turmeric
1/4 teaspoon chili powder
2–3 tablespoons arrowroot powder (or cornstarch for less crisp, or gluten-free flour)
Instructions
Trim the okra stems and cut each pod in half lengthwise; drain on paper towels for 5-10 minutes
In a bowl, mix avocado oil, salt, garlic powder, cumin, coriander, turmeric, and chili powder. Add 2-3 tablespoons arrowroot powder and toss until the okra is fully coated
Preheat air fryer to 400°F for 5 minutes
Arrange the okra in a single layer in the air fryer basket. Avoid overcrowding (cook in batches if needed)
Air fry for 10-15 minutes, tossing or flipping the okra every 5 minutes for even browning and crispiness
Serve immediately with a squeeze of lemon or alongside preferred dips
