Ingredients
2 cups cooked and cooled mashed potatoes
1/2 cup grated cheddar cheese
1/4 cup panko breadcrumbs
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons melted butter
Fresh parsley for garnish
Instructions
In a large bowl, combine mashed potatoes, cheddar cheese, garlic powder, onion powder, salt, and pepper.
Form mixture into 12-15 balls (about 1.5 inches in diameter).
Place panko breadcrumbs in a shallow dish. Coat each ball evenly with breadcrumbs, pressing gently to adhere.
Lightly spray balls with olive oil to enhance browning. Place in air fryer basket in a single layer.
Air fry at 375°F for 10-12 minutes, flipping halfway through.
Garnish with fresh parsley before serving.
Notes
For best results, use leftover mashed potatoes from the day before for firmer texture.
