Description

Air Fryer Shrimp Hibachi is a restaurant-quality Japanese-inspired dinner that’s quick, easy, and perfect for busy weeknights.


Ingredients

Scale
  • 1 pound shrimp, peeled and deveined
  • 1 pound yellow squash or zucchini, cut into quarter-inch pieces
  • 1 green bell pepper, deseeded and sliced
  • 1 pound mushrooms, halved or quartered if large
  • 4 tablespoons tamari soy sauce or regular soy sauce
  • 2 tablespoons olive oil
  • 2 teaspoons sesame oil
  • 1 teaspoon minced garlic
  • 1 teaspoon minced ginger
  • Easy Yum Yum Sauce, for serving (optional)

Instructions

1. Preheat air fryer to 400 degrees F / 200 degrees C.

2. Place shrimp, squash, bell pepper, and mushrooms in a mixing bowl.

3. Add tamari, olive oil, sesame oil, garlic, and ginger and toss until fully combined.

4. Add half of the hibachi mixture to the air fryer basket and cook for 8-9 minutes, turning halfway through cooking.

5. Remove cooked batch and repeat with the remaining mixture for another 8-9 minutes.

6. Serve immediately on its own or with yum yum sauce.


Notes

If using frozen shrimp, thaw and drain thoroughly before cooking.

This recipe works best with jumbo shrimp.

For more flavor, marinate the shrimp and vegetables for 30 minutes to 2 hours before cooking.

Use reduced-sodium soy sauce or tamari if preferred.

Cut vegetables into evenly sized pieces for consistent cooking.

Avoid overcooking the shrimp by monitoring cook time closely.

Recipe can be doubled or tripled, but cook in batches as needed.

Store leftovers in an airtight container in the refrigerator for up to 4 days.
