Description
A modern twist on classic hasselback potatoes, these air fryer magic potatoes are crispy on the outside and soft on the inside, infused with fragrant garlic butter and herbs. An impressive and simple side dish that’s perfect for any meal.
Ingredients
4 medium Russet potatoes
4 cloves garlic, minced
2 tablespoons unsalted butter, melted
1 tablespoon olive oil
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon dried rosemary (or 1 tablespoon fresh parsley, chopped)
2 tablespoons fresh parsley, chopped for garnish
Instructions
Preheat your air fryer to 400°F (200°C)
Using a very sharp knife or a mandoline, slice the potatoes vertically in thin, parallel slices, about 1/8 inch apart, without cutting all the way through on the bottom
In a small bowl, mix together melted butter, minced garlic, olive oil, salt, pepper, and rosemary
Evenly brush or spoon the garlic butter mixture between the slices of potatoes
Place the potatoes in the air fryer basket ensuring the slices aren’t overlapping
Air fry for 25-30 minutes, flipping halfway through, until golden and crispy
Remove from the air fryer and sprinkle with fresh chopped parsley before serving
Notes
Use a zucchini or apple corer to help stabilize the potato while slicing.
For extra flavor, you can add a pinch of garlic powder or paprika.
Let the potatoes rest for 2-3 minutes before serving for a neater presentation.
Store leftovers in an airtight container at room temperature for up to 1 day. Reheat in an air fryer for best texture.
