Description

Crispy, golden Mediterranean-style potatoes with lemon and oregano, made effortlessly in an air fryer. A tender interior with a flavorful, aromatic finish.


Ingredients

2 pounds baby potatoes (Yukon Gold or red), washed and halved
2 tablespoons olive oil
1 teaspoon dried oregano
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon fresh lemon juice
Optional: 2 tablespoons chopped fresh oregano (for garnish)


Instructions

Dry the halved potatoes thoroughly with a clean towel or paper towels
Toss the potatoes in a large bowl with olive oil, oregano, garlic powder, salt, and pepper until evenly coated
Preheat air fryer to 375°F (190°C) for 3-5 minutes
Arrange potato halves in single layer in air fryer basket (do not overcrowd)
Cook for 12-15 minutes, shaking basket halfway through for even browning
Once crispy and tender, sprinkle with lemon juice and fresh oregano (if using)

Parchment paper lining helps prevent sticking
Check for crispness after 12 minutes, as cooking time may vary by potato size
