Ingredients
1 large eggplant
1/4 cup marinara sauce
1 cup shredded mozzarella cheese
1 tbsp olive oil
Salt to taste
Black pepper to taste
Fresh basil or oregano (optional)
Additional toppings (spinach, cherry tomatoes, avocado, etc.)
Instructions
Preheat air fryer to 375°F (190°C).
Slice eggplant into 1/2-inch rounds; pat dry with paper towel.
Lightly brush slices with olive oil and season with salt and pepper.
Air fry for 8 minutes until tender and lightly golden.
Flip slices, top with marinara, cheese, and desired toppings.
Return to air fryer and cook 5-7 minutes until cheese melts and bubbles.
