Description

A guilt-free pizza alternative using tender, crispy eggplant slices as a base for marinara, cheese, and toppings. Quick, low-carb, and customizable for any dietary preference.


Ingredients

1 large eggplant
1/4 cup marinara sauce
1 cup shredded mozzarella cheese
1 tbsp olive oil
Salt to taste
Black pepper to taste
Fresh basil or oregano (optional)
Additional toppings (spinach, cherry tomatoes, avocado, etc.)


Instructions

Preheat air fryer to 375°F (190°C).
Slice eggplant into 1/2-inch rounds; pat dry with paper towel.
Lightly brush slices with olive oil and season with salt and pepper.
