Description
A healthy, crunchy take on Southern-fried okra using an air fryer. Coat fresh okra in olive oil and savory spices to create light, tender bites with a satisfying crisp without the greasy feel. Quick and tasty, this recipe is perfect as a side or snack.
Ingredients
2 cups fresh okra, trimmed and stemmed
2 tablespoons olive oil
1 teaspoon paprika (smoked or regular)
1 teaspoon garlic powder
½ teaspoon kosher salt (adjust to taste)
½ teaspoon black pepper
Instructions
Preheat air fryer to 400°F (204°C)
Wash and trim the okra, patting it dry with a paper towel
In a shallow bowl, combine paprika, garlic powder, salt, and pepper
Evenly toss the okra in the spice mixture, ensuring each piece is lightly coated
Arrange the okra in a single layer in the air fryer basket
Air fry for 12–15 minutes, shaking the basket halfway to promote even crisping
Check for golden color and snappy texture before removing from the air fryer
Notes
Ensure okra is completely dry before tossing with oil to maintain crispiness
For extra flavor, add a pinch of cayenne pepper or crushed red pepper flakes
Serve warm as a side or appetizer, pairs well with vegan ranch or a yogurt dip
Store leftovers in an airtight container for up to 2 days
