Description

Tender chicken and colorful veggies marinated in lemon-garlic sauce, air-fried to crispy perfection without charcoal or cleanup. A halal-friendly, quick weeknight solution with bold flavor.


Ingredients

4 boneless chicken thighs (halal, cubed)
1 red bell pepper (cut into 1-inch pieces)
1 yellow bell pepper (cut into 1-inch pieces)
1 yellow onion (cut into 1-inch pieces)
2 zucchini (sliced)
1 cup cherry tomatoes
1 lemon (juiced)
2 cloves garlic (minced)
2 tablespoons olive oil
1 teaspoon paprika
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon black pepper


Instructions

Combine chicken, 1/3 of lemon juice, garlic, olive oil, paprika, cumin, salt, and pepper in a bowl; marinate 15 minutes.
Thread onto skewers alternating veggies and chicken.
Preheat air fryer to 400°F.
Air fry unstacked for 10-12 minutes, flipping halfway.
Sprinkle crushed fresh mint over finished skewers (optional).
