Description

Crispy, caramelized air fryer carrots with coconut aminos and savory herbs, ready in 19 minutes. A healthy, flavorful side dish perfect for busy meals or meal prep.


Ingredients

Scale

2 large carrots, peeled and sliced at 45 degrees into 12” pieces
2 tablespoons avocado oil (or olive oil)
½ tablespoon coconut aminos
Salt and black pepper, to taste
1/3 teaspoon garlic powder
¼ teaspoon paprika
12 tablespoons nutritional yeast or vegan parmesan
Chopped fresh parsley
23 basil leaves
Toasted pistachios


Instructions

Preheat air fryer to 350°F if required by your model.
Slice carrots at a 45-degree angle into 1-2″ pieces.
In a bowl, combine avocado oil, coconut aminos, salt, pepper, garlic powder, and paprika.
Toss carrots until evenly coated.
Arrange carrots in a single layer in the air fryer basket and cook at 350°F for 12-15 minutes, flipping halfway.
Immediately top with nutritional yeast/vegan parmesan, parsley, basil, and pistachios. Serve warm.


Notes

Preheating the air fryer may not be necessary for all models.
Ensure carrots are in a single layer for even cooking and crispiness.
Garnishes are optional but highly recommended for added flavor and texture.
Store leftovers in an airtight container at room temperature for up to 3 days.
