Description
Juicy, tender chicken thighs marinated in a tangy Greek yogurt blend and crisped in the air fryer for a healthier, restaurant-style meal. Perfect for quick dinners, tacos, or sandwiches.
Ingredients
1/2 cup nonfat Greek yogurt
2 garlic cloves, minced
1 lemon, halved (use half, reserve the other for garnish)
1 tablespoon Cajun seasoning (use half for marinade, half for breading)
1/2 teaspoon paprika (smoked preferred)
1/2 teaspoon dried herbs, such as herbs de Provence or Italian seasoning
4 boneless, skinless chicken thighs
Instructions
In a bowl, combine Greek yogurt, minced garlic, juice of one lemon half, half of the Cajun seasoning, paprika, and dried herbs to create a marinade.
Add the chicken thighs to the bowl and mix well to coat. Cover and refrigerate for 2 hours.
After marinating, remove the chicken from the fridge and let sit at room temperature for 15 minutes.
Sprinkle the remaining Cajun seasoning over each chicken thigh.
Prep your air fryer basket and lightly coat it with oil. Place chicken thighs in the basket ensuring they are not overlapping.
Air fry at 400°F (200°C) for 14 minutes, or until golden, crisp, and cooked through. Flip the thighs halfway through cooking for even browning.
Remove from the air fryer, garnish with the remaining lemon half, and serve warm.
Notes
For a spicier kick, add a pinch of cayenne pepper to the marinade.
For a vegan version, substitute the chicken thighs with firm tofu or tempeh and marinate overnight for extra tenderness.
You can store any leftovers in an airtight container in the refrigerator for up to 3 days.
