Description

A quick, family-friendly meal featuring crispy BBQ chicken drumsticks paired with flavorful root vegetables. Air fryer magic ensures tender meat and caramelized veggies in under an hour.


Ingredients

4 large chicken drumsticks
1/2 cup pork-free BBQ sauce
1 tablespoon olive oil
1 cup thinly sliced red onion
1 large carrot, cut into 1-inch rounds
1 medium white zucchini, quartered lengthwise
1 teaspoon garlic powder
1 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon black pepper


Instructions

Pat drumsticks dry and season with paprika, garlic powder, salt, and pepper
Place raw vegetables and onions in air fryer basket, drizzle with olive oil, and toss to coat
Cook at 400°F (200°C) for 15 minutes with chicken on the top rack
After 15 minutes, brush both sides of drumsticks generously with BBQ sauce
Return chicken to air fryer and continue cooking 15-20 minutes until chicken reaches 165°F (74°C) and glazes are caramelized
Toss vegetables with any accumulated juices before serving


Notes

Use butternut squash or bell peppers if zucchini is unavailable
Avoid opening air fryer mid-cook to prevent heat loss
Drumsticks are done when juices run clear and skin is crispy
